June is joy-filled June for John and I. We missed our yearly time at our timeshare in Cancun last year, but are here now. Our daughter, Brennon, bonus son, Brett, and their family +1 are here with us.
A grandmother’s dream is to spend time with her grandchildren. I am ever so blessed to be living this dream with half a dozen of our grandchildren this week.
So thankfully, the weather is totally beautiful. (June can be a rainy season in Cancun.)
Just watching our older ones playing water volleyball each morning and beach volleyball each afternoon brings back so very many memories of our years of coming here as the Buchanan boys grew up. They have always loved this place and shined in the volleyball competitions. Caris and Cali would love to be in the game too. Cali gets as close to the side lines as possible and steps on over into the beach game unnoticed once and while between serves.
John and I cooked our favorite Cancun meal tonight of enchiladas. The family voted to have a repeat on Thursday.
It has been very heartwarming as I watch the older brothers enjoy being with their little sisters. The oldest brothers live in other states now; Chandler in Kansas City and Cameron in LA, and don’t get to come home much.

Our little granddaughters love lemon ice cream when they come to spend the day on Thursdays. This is made from the Basic Fabufit Vanilla Ice Cream recipe with just a couple capfuls of pure lemon extract added and a little liquid stevia.
Lemon Ice Cream
This is a delicious and super quick recipe for those of us who miss ice cream . This is only a small adjustment to the Vanilla recipe and la la…………lemon. Honestly, it is ridiculously delicious. It reminds me of the best of homemade freezer ice cream, soft serve ice cream and snow ice cream. Can you begin to get the picture?
- 4 ounces of Coconut full fat milk
- 2 TBLS Pure Vanilla Extract
- Pinch Salt
- 3 TBLS Raw Honey or Agave
- Several Added Drops of Liquid Organic Stevia for more sweetness
- 1/4 C Vanilla Protein
- 2 capfuls of Pure Lemon Extract
How to Make
- Blend all of The Above
- Add the crushed ice a little at a time. Blend in powerful blender. I have a Blendtech which has a button called ice cream. I think any blender that can crush ice would work. Our refrigerator has crushed ice, so I used the crushed ice from the refrigerator and dumped it into the blender and then blended to make it a smooth soft serve like ice cream.
