
Joy-Filled June
June is a joy-filled June for John and me again this year! This year’s June beginning post is almost just like last. The photo is Carter a number of years ago on the beach of Cancun. As I look at him now, it is hard to believe such a short time ago he was this little. He’s now over 6 feet tall and his hair has turned kinky curly.
This will be out next to last year to be able to have our timeshare in Cancun. It expires in 2024.
A Grandmother’s Dream
A grandmother’s dream is to spend time with her grandchildren. I am ever so blessed to be living this dream with more than half a dozen of our grandchildren the next two weeks. We leave in the morning.
Praying for beautiful weather as we had last year. Cameron will be flying in from Los Angelos to meet us there. This will be a first Cancun trip for Nathan, Brooke’s son.
So Busy
May went by in a flash, but was filled with good things. We had two grandsons graduate: Braden Rotramel from Tarrelton and Austin Rotramel from Grambling with his Masters. The little granddaughters are now 7 and 9 and enjoyed their showmanship skills at their mom, Brennon’s, Studio dance recital for 2022.
John has been so very busy with his Ice House, and I have been working very hard at preparing my next Fabufit course: Breaking through Your Stubborn Set Point. I’m so very excited about teaching this course. I’ve been so intrigued with this subject for years as I studied and learned. Recently I came across a wealth of new information (non-copyrighted), which I have captured and am adding to my foundational knowledge. It will be an 8-week course. I will be offering an EarlyBird special.
Paleo Easy Lemon Ice Cream

absolutely love these ice creams: Vanilla, Chocolate, Strawberry, and Spinach.
All are good. Our favorite this year is vanilla but lemon is second.
Lemon Ice Cream
This is a delicious and super quick recipe for those of us who miss ice cream. This is only a small adjustment to the Vanilla recipe and la. la………..lemon. Honestly, it is ridiculously delicious. It reminds me of the best homemade freezer ice cream, soft-serve ice cream, and snow ice cream. Can you begin to get the picture?
Ingredients
- 4 ounces of Coconut full-fat milk
- 2 TBLS Pure Vanilla Extract
- Pinch Salt
- 3 TBLS Raw Honey or Agave
- Several Added Drops of Liquid Organic Stevia for more sweetness
- 1/4 C Vanilla Protein
- 2 capfuls of Pure Lemon Extract
How to Make
- Blend all of The Above
- Add the crushed ice a little at a time. Blend in a powerful blender. I have a Blendtech which has a button called ice cream. I think any blender that can crush ice would work. Our refrigerator has crushed ice, so I used the crushed ice from the refrigerator and dumped it into the blender, and then blended it to make it smooth soft-serve-like ice cream.
