Arugula Salad with Ripe Peaches
I found this delicious summer salad with ripe peaches on the Costco website. We served it for guests at a dinner party and it was a hit. The original salad dressing with the recipe was a bit complicated so I used one of our own favorites.
Summer Arugula Salad with Ripe Peaches
Ingredients
- 3 ripe Yellow Peaches pitted and cut into wedges to be grilled
- 10 cups Arugula
- 4 Tbsp. Goat Cheese
- Dressing (Mixed together vigorously)
- 3 Tbsp. Apple Cider Vinegar
- 2 Tbsp. Olive or Avocado Oil
- 2 Tbsp. Honey or Aguave
- 2 tsp. Dijon Mustard
- 1/4 tsp. Sea Salt
- 1/8 tsp. Black Pepper
Instructions
- Mix together Dressing ingredients
- Depending on the amount of dressing you like, you may wish to double dressing recipe.
- Grill peaches (I used a heavy duty skillet).
- When ready to serve:
- Pour dressing over Arugula
- Top with peaches and goat cheese.
Options
I’m sure you could use spring lettuce in place of Arugula. For us, the Arugula made a great changed to our regular salad choice. Our guests liked it enough to ask for the recipe.
