Easy Paleo/Keto Peach Ice Cream
You will love this easy Paleo Peach Ice Cream. And you can whip it up in just a few minutes to enjoy. John and I discovered making ice cream when we purchased a Blendtech a few years ago. Vanilla has been our favorite. This year, Peach has taken #1. If you have a VitaMix it will work perfectly. Likely, any strong blender that will allow crushed ice will work.
Summertime is such a good time to enjoy fresh peaches. In our area, Sam’s Club always has delicious boxes of peaches for a few weeks in the summer. We realized one of our boxes was getting ripe rather quickly, so I decided to use one in our Easy Blender Ice Cream.

By the way, I must admit that John and I have been whipping up a blender of easy paleo ice cream quite often in this hot summer heat. We don’t feel bad at all eating ice cream every night. (It didn’t use to be that way.)

Please note that since making these over and over I have discovered that adding the Coconut Oil (although delicious) can be troublesome in clumping when the cold ice is added. I have just been leaving it out. I have also found that adding the ice a little at a time works perfect. Adding too much at once can stop your blender.
To make the delicious Peaches and Cream version, just add two ripe peaches to the blender using the Vanilla Recipe and leaving out the coconut oil. Use less Coconut milk and you may need more crushed ice. I adjusted the sweetening by using three tablespoons of natural Agave syrup and one added packet of Stevia. Paleo/Keto Peach Ice Cream
Ingredients
1/3 Cup Can Coconut Cream (Sprouts Brand is a good one.)
2 Ripe Fresh Peaches ( I don’t even peel ours.)
1/3 Cup Vanilla Protein (I like Shaklee Vanilla ESP or Shaklee Vanilla Meal Shake or Melaleuca Proflex 20 Vanilla).
3 TBL. Pure Vanilla Extract
Pinch Sea Salt
3 TBL. Agave, Honey, or Sweetener of your choice (if Keto)
1 Packet Stevia
4-5 Cups Crushed Ice (it takes more ice when using two peaches verses one.)
How To Make
Combine coconut cream, peaches, protein, vanilla, sea salt, and sweetener in Blender and mix until combined
Add the crushed ice a little at a time until the mixture begins to thicken, then add the rest of the ice and blend until frozen.This takes a few minutes.
