Time to Bring in the Credit Foods
We may have all had enough of those health/destroying foods for a while (no matter how delicious they were,)
One of our spring semester team Fabulous members, Diane, found a treasure of a Paleo Dish. John and I have made it 3 or 4 times. If it weren’t so very hard to peel a butternut squash, we would make it much more often????
Baked Vegetables
Ingredients
1 Butternut Squash peeled and cut into cubes
2 Cups or so of Baby Brussels Sprouts cut in half
1 Red Bell Pepper seeded and cut into strips
2 tsp. Oregano
Salt and Pepper to taste
3 T or more of Olive Oil or Coconut Oil
How to Make
Prepare s pyrex large rectangular dish by brushing a little coconut or olive oil on it.
Combine chopped vegetables in s big bowl and toss with Oregano, Sea Salt, Pepper, and Olive or Coconut Oil.
Bake at 400 degrees for 40 minutes.
How to Cut Butternut Squash
You may search a better way, but this is the best we have tried so far:
From Diane’s husband, Ray: Cut 1/2 in off bottom & top. Then stand it up on flat bottom and cut in half from top to bottom. Rotate squash & repeat – now u have 4 equal parts. Sharp knife is essential. Now cut like u would a cantaloupe. Slow and very controlled. Cut into small cubes. Happy peeling!
