Delicious Banana Pudding
Even though I did several short cuts, this turned out to be a delicious Banana Pudding, one of the best I have ever had. One of our Fabufit Team Members told us about a website she found last spring called Downshipology.com. She shared that she spent the shut-in spring months cooking almost all of the recipes on this site. Since I love finding treasures, I immediately took a look and found the “Fresh Banana Pudding”. I didn’t have time to complete the long process it called for, so I took a few shortcuts and discovered something hard to beat.
I thought I would certainly have to find a vanilla wafer paleo sub in order to make this taste perfect, but I didn’t. Here is my shortcut version
- Thicken with Arrowroot
- Paleo Banana Pudding
Ingredients
- 2 1.2 cups full-fat coconut milk (from cans)
- 2 teaspoons vanilla extract divided
- 4 bananas (I used only 3)
- 4 rounded teaspoons of arrowroot powder (dissolved in some of
the coconut milk) - 1/3 cup Agave or Honey
- 4 egg yolks
- 1/4 teaspoon salt
Optional Topping - Unsweetened, toasted coconut flakes
- Coconut whipped cream
Instructions
- Use a medium saucepan to whisk the coconut milk and 1 tsp. vanilla extract
- Using medium heat, heat the coconut milk, whisking often until it begins to
simmer. (Do not let the milk boil.) - Prepare 3 bananas peeled and sliced
- Add the arrowroot powder that has been dissolved in some of the coconut milk
- Heat, stirring constantly until the mixture begins to thicken
- Add the egg yolks, agave, and salt mixing well
NOTE: it is important to have the egg yolks mixed in a separate bowl and slowly add some of the hot coconut milk to this bowl making sure not to cook the egg. Then transfer this mixture slowly into hot coconut milk mixture stirring constantly.
- Stir in the bananas and cover the saucepan for a little while. (Sorry but I didn’t let it sit 4 hours…maybe 4 minutes. However, I did realize on my 4th cooking that heating the mixture enough to be sure bananas are cooked is important. This last batch had not as ripe bananas and wasn’t as good.)
- (Sorry, but neither did I remove the bananas as instructed, or leave the pudding in the refrigerator overnight). It was still absolutely delicious.
- Not having the coconut flakes on hand or the coconut cream whipped up, I skipped this topping but know it would have been delicious added.
This wonderful dessert has appeared at our dinner meals four times now.
