Dress Your Salad for Summer
As Team Fabulous begins our course on Taking Habits to Autopilot, one of our new daily habits is to incorporate 10 servings of veggies each and every day. Goodness, this takes some planning, but brings huge rewards. Tyler Bramlett, in his book 27 Body Transformation Habits, reveals that only 1 in 10,000 people eat enough vegetables each day. I am very sure some eat absolutely none.
What is a Serving:
1 Serving of raw, leafy greens = 1 cup
2. Most other vegetable serving sizes are 1/2 cup
Committing to have an assortment of steamed vegetables and a large salad at each dinner is a great way to quickly increase your amount of servings. Just be sure to dress the salad with a healthy dressing as below.
BALSAMIC & STRAWBERRY VINAIGRETTE
(Makes 1- 1/2 C)
Ingredients
1/4 C Fresh hulled & chopped strawberries
1 TBL Agave nectar, honey, or unsweetened strawberry jam
1/4 tsp Sea salt
1/8 tsp Freshly ground pepper
2 TBL Balsamic vinegar
3/4 C Extra virgin olive oil
Directions
Place all but olive oil in blender and blend on low until very smooth. With blender running, slowly pour the olive oil through the top in a steady stream to emulsify the dressing. Taste and adjust flavors.
So delicious on salad greens alone or with dried cranberries, pecans, apples. This was in the Ninja Blender book. BTW – the Ninja Blender is excellent!
