Easy Cauliflower Soup
One night last week, we knew we were in a rush to get to our grandson’s HS football game and needed an easy idea for dinner. I found one recipe for a soup but sounded so complicated and time consuming. So I changed it to be fast and ever so delicious.
Ingredients
One large head of Cauliflower steamed
1 Onion chopped
1 tsp. Sea Salt
3/4 – 1 tsp Pepper
1 tsp. Garlic Powder
1 Can Organic Coconut Cream
1 Carton of Organic Bone Broth
How to Make
Steam the cauliflower.
Saute the Onion in some coconut oil until it is softened.
Add seasonings (You might want more. John says it could take more. I liked it just like it is.)
Add some of the Bone Broth and transfer the above and the Cauliflower to a blender to puree.
Add back into the pan and add the remainder of the Bone Broth and the Coconut Cream.
Heat and serve with a big green salad.
Another Simple Idea
Use potatoes in place of the cauliflower. Since we try to stay mostly Paleo, I will use the nutrient filled (but hard to find) Japanese Sweet Potatoes. They look just like white potatoes in a recipe, but taste better.
