Delicious Creamy Alfredo Sauce
This photo was my first attempt at creating a Paleo approved Alfredo Sauce. I searched for Paleo recipes and for non Paleo recipes and ended up combining many recipes to come up with this. We now make it with more Zoodles and let the sauce thicken more. Oh my goodness, it is easy and over-the-top delicious.
Ingredients
- 1/2 to 1 Pound Cubed Chicken Breast
- 1 TBL Coconut Oil
- 1 Can Full Fat Coconut Cream
- 1 1/2 TBL Ghee or Butter from Grass
Fed Cow - 4 tsp Arrowroot Powder (Flour)
- Salt and Pepper to taste
- 1 tsp+ Garlic Powder
- 1 tsp+ Onion Powder
3 Zucchini Squash for making Zoodles
How to Make
- Heat Coconut Oil in Skillet over medium heat
- Add Cubed Chicken and cook until no longer pink and set aside (Or thaw and use some already frozen left over Rotisserie Chicken)
- Prepare Zoodles with Veggetti or Spiralizer in separate bowl
- *Optional: Saute Zoodles in little Olive or Coconut Oil, Salt, Pepper
- Combine Coconut Cream, Butter or Ghee, Arrowroot Powder in saucepan and heat until thickened
- Stir in Salt, Pepper, Garlic Powder and Onion Powder
- Add Zoodles and cook a few minutes, or saute Zoodles separately
- Add Cooked Chicken and Heat together
Taste to see if more seasonings needed
With a big tossed salad, this makes an elegant, wonderful dinner.
