Cinnamon Paleo CerealCereal for Paleo Fans

Our friend at Crossfit, Jon Holman, shared a recipe he found for cereal. We tried it and I loved it although my John says it needed to be rolled out a little thinner. (I rolled it as thin as I could in my speed cooking amount of time allowed 🙂

Cinnamon Paleo Cereal

Ingredients

1 Cup Almond Flour

1/4 Cup Coconut Flour

3/4 C Coconut Sugar

1/4 Tsp. Salt

1 1/2 TBL  Cinnamon

1 Large Egg White

2 TBLS Coconut Oil

How to Make

  1. Prepare 2 Baking Sheets by lining with Parchment Paper
  2. Mix Dry Ingredients
  3. Add Egg White and Oil
  4. Divide Dough in 1/2 and roll out very thin , 1/2 on each Baking Sheet
  5. Bake 3-4 minutes at 450 degrees. Be careful, as it burns easily.

Recipe suggested sprinkling coconut sugar on top. I felt like it was perfectly sweet without any more coconut sugar.

Note

This is tricky to roll out. I had to put extra coconut oil on my hands and on the rolling pin.
