This was posted on Paleo Ammo Crossfit Community by Grady, I believe. I finally made some for our family last night. I do recommend lessening the honey as it is a little too sweet. As a midmorning snack, a small bar of this granola with a cup of hot tea and a piece of fresh fruit would be delicious. It is so good, it could be tempting to eat several small bars.
Makes 18 bars or 3.5 cups granola cereal
These can also be made into little balls and dipped in dark chocolate. I am only using them as bars and may make more next week to have ready for two of our grandchildren that will be staying with us. In fact, they will get to sample of several Paleo style dishes for a few days while their mom and dad are on a trip.
Preheat oven to 300 F. Line a 9×13 metal cake pan with parchment paper.
In a small saucepan, whisk together and bring to slight boil the first three ingredients below:
½ C honey – you may wish to have more. The recipe calls for 2/3 cups but too sweet for me!
3 T extra virgin coconut oil melted
1 t pure vanilla extract
Wisk in the next ingredients
¼ t kosher salt
½ C pumpkin puree (canned works perfectly)
1 t cinnamon
1 t nutmeg ( like this better than cloves as was called for)
½ t ginger
In a large mixing bowl, stir the following together:
1 ½ C unsweetened shredded coconut
1 C slivered almonds (I added the almonds in place of one of the two cups of pumpkin seed called for.)
1 C pumpkin seeds
1 C golden berries, roughly chopped (This is golden raisins)
Add ½ C whole brown flax seeds if you desire.
(As I just enjoyed eating another little bar of this, I realize the pumpkin seeds and slivered almonds make it delicious. I might even add more next go around. Also, the little golden berries are ever so good even though I don’t like regular raisins.)
Pour liquid honey mixture over the dry ingredients and stir together. Then pour the mixture into the parchment paper-lined metal pan and press down until you have an even thickness.
Bake at 300 F for 25 minutes. Remove from oven and let it cool completely (hard to do without eating a taste or two), and then place in refrigerator for one hour or overnight before cutting into bars about 1×2 inches each.
For Granola Cereal, just break the cooled granola into small bite-sized pieces. Store in a tight jar and enjoy over almond milk.
