Paleo Quiche You will Love

Fabufit Paleo Quiche

This is absolutely delicious even without cheese! It is a combination of 3 or 4 recipes inspired by a delicious non paleo quiche I tasted at my friend, Jeanine Flemming’s, home.

Ingredients

Crust

  • 1 and 1/4 C Blanched Almond Flour
  • 1/4 tsp Sea Salt
  • 1/4 tsp Baking Soda
  • 2 Eggs (from Cage Free Chickens)
  • 2 TBLS or less of Butter from Grass-Fed Cows

Filling

  • 1/2 C full fat Coconut Milk
  • 1 Egg
  • 2 Green Onions thinly sliced
  • 1 C sauteed Mushrooms (or Bacon)
  • 1/4 tsp Sea Salt
  • 1/4 tsp Red Pepper or 1/8 tsp Red Pepper Flakes
  • 2 C. Fresh or Frozen Spinach

How to Make

  1. Heat oven to 375
  2. Combine Crust ingredients well and press out to make a THIN CRUST in a pie pan
  3. Sautee Mushrooms
  4. Beat Egg and Coconut Milk together adding salt and pepper flakes (Use hand mixer to mix thoroughly)
  5. Layer thinly sliced Green Onions, then sauted Mushrooms, then Egg Mixture over crust
  6. Place Spinach on top AND bake 20 minutes at 375 degrees.
