Fabufit Paleo Quiche
This is absolutely delicious even without cheese! It is a combination of 3 or 4 recipes inspired by a delicious non paleo quiche I tasted at my friend, Jeanine Flemming’s, home.
Ingredients
Crust
- 1 and 1/4 C Blanched Almond Flour
- 1/4 tsp Sea Salt
- 1/4 tsp Baking Soda
- 2 Eggs (from Cage Free Chickens)
- 2 TBLS or less of Butter from Grass-Fed Cows
Filling
- 1/2 C full fat Coconut Milk
- 1 Egg
- 2 Green Onions thinly sliced
- 1 C sauteed Mushrooms (or Bacon)
- 1/4 tsp Sea Salt
- 1/4 tsp Red Pepper or 1/8 tsp Red Pepper Flakes
- 2 C. Fresh or Frozen Spinach
How to Make
- Heat oven to 375
- Combine Crust ingredients well and press out to make a THIN CRUST in a pie pan
- Sautee Mushrooms
- Beat Egg and Coconut Milk together adding salt and pepper flakes (Use hand mixer to mix thoroughly)
- Layer thinly sliced Green Onions, then sauted Mushrooms, then Egg Mixture over crust
- Place Spinach on top AND bake 20 minutes at 375 degrees.
