SNICKERDOODLES

Snickerdoodles and hot cocoa bring up fond memories of the things we used to do and the foods we used to eat. As we remember the joy of yesterday and all of the Christmas memories, we begin to think of tomorrow, a new year on the horizon, and dreams we may have set aside. For so many, there are dreams of becoming healthier and  defluffing those fat cells.

Here are two of our very favorite recipes for bringing back those delicious food memories with guilt free eating. We love the Paleo recipe,s and have tested out and found so many favorites. It has brought back the joy of eating this past year. Just click on the links and they will take you right to the recipes.

The snickerdoodles are perfect to make and freeze and allow yourself  a couple with some hot tea periodically. You really need to freeze them or too tempting to eat them all.

 

 

 

Hot Chocolate

HOT COCOA

So good on a cold winter’s night. John and I make this and then I save any left over in a big mason jar in refrigerator for another time.

Here is what you need to whip it up:

  • 1 Can of Full Fat Coconut Milk (14 oz)
  • 28 oz of pure Water
    NOTE: If you don’t have the Can of Coconut Milk on hand, just use Coconut or Almond Milk from a carton. Use 1/2 milk and 1/2 water
  • 1/4 C. Pure Cocoa Powder
  • 1/2 C. of Sweetener (Agave or Maple Syrup)
  • 2 tsp Pure Vanilla Extract

    How to Make

  • Stir the cocoa into a small amount of milk in saucepan until the cocoa is somewhat dissolved and then add:
  • The rest of the milk
  • Sweetener
  • Vanilla
  • Stir in saucepan until heated
  • TOP with a scoop of Coconut Whipped Topping

Blendtec Blender


This is super easy if you have a high speed blender like a Vitamix or Blendtec. With my new Blendtec, I can just dump all into the blender and press the soup setting and then repeat the soup button again. This comes out the perfect temperature. Not too hot, but just right. Be sure to hold your hand on the lid. As it gets hold it can blow it off. (oops, it happened to me.)
