Healthy Harvest Pumpkin Muffins
Once again, I ended up at 360yourlife.com for the best pumpkin muffins. Others I tried just weren’t as good. Pumpkin is so good for us! It contains carotenoids, beta-carotene, fiber, potassium and Tryptophan (found in Prozac), it also helps keep our eyes healthy and our skin wrinkle-free! Hmm, I like that.
This one is nut free, but I like adding some walnuts or pecans when I make it.
Here are a few items you will need. I find all of these at Costco here in the Dallas area.
1/4 C. Coconut Oil, Melter
1/2 C. Pure Maple Syrup
4 Eggs at Room Temperature
3/4 C. Organic Pumpkin Puree ( I use 1/2 of a 15 oz can of Pumpkin Puree and save the other 1/2 to make Pumpkin Pie)Theses are some of our family’s very favorite. My husband and I recently had dinner with a good friend who told us about his experiences with adding more baking soda or baking powder to recipes to make the item rise more. I tried adding the Baking Powder and it makes a big difference.)
1/2 cup coconut flour
1/2 cup tapioca flour
1 tbsp. pumpkin pie spice
1/2 tsp Baking Powder
¼ tsp. of salt
(I have recently discovered how adding a drop or two or a pure Lemon Oil adds so much to muffins, even to biscuits:)
1.) Pre-heat oven to 350.
2.) In a large bowl, mix together the melted coconut oil and maple syrup. Mix in one egg at a time, making sure it’s fully incorporated before adding the next. Mix in the organic pumpkin puree.

3.) Slowly add in the dry ingredients. Once combines, you can mix in cacao nibs, seeds or nuts if desired, or you can just leave the batter plain.
4.) Coat your muffin tin with coconut oil or coconut oil spray. Fill muffin tins to the top with the batter. Top the muffins with extra toppings if desired.

5.) For mini muffins, bake for 13-15 minutes or until done. For regular sized muffins, bake for 22-25 minutes or until done. Remove from oven and let cool. They taste great right out of the oven, but they taste even better the next day (if you still have any leftover)!
