The Right Fats Can Make You Thin
About this time of the year, many of us are realizing we have slipped down the slippery slope of sweets and processed food. Yikes, it is so very easy to slide. Have you noticed? Each of our 10 neighbors in our cul de sac brought a Christmas gift. Most of it was food in the way of candy, cookies and popcorn. We’ve had some beautiful dinners on Christmas Eve, Christmas Day, a few dance dinner events and a delicious New Year’s Family Dinner. We’ve had many opportunities to eat sweets and the wrong fats that certainly do not make us thin. Oh, goodness, it is time to make a few changes. It is time to retrain those taste buds.
Because its easy to start feeling desperate, (especially if one steps on the scales about now); these desperate feeling can cause us to overreact and cut not only the bad processed fats and sugars, but the good as well. We need to be really careful here. The right fats can actually make us thin. They help us absorb the nutrients in other foods, they help our brain to be alert and mindful, and they help us feel full.
This past week I listened to Dr. Caroline Leaf in a podcast called The Truth About Fats.

The old message has been that high lipid cholesterol increases heart disease.” This is a misconception that was drawn because of the fact that cholesterol goes to the site of damage in the body to help the healing process. Since it was found there, past researchers assumed it caused the damage. “It didn’t.
- Don’t be drawn into the low-fat campaign. “Ask yourself
how did they get rid of the fat in the fat free product? What did they replace the fat with?. Low-fat yogurt is high in sugar. You actually need fats to absorb nutrients. Use olive oil and lemon juice on your salad. Pasteurized eggs are very good. Avocados are good.
3. Avoid trans fats entirely which are high in something like pizza.” This is alarming as I watch how many children and teens (even in our own family) eat pizza many times a week.
4.Low levels of cholesterol in the body are dangerous. They can cause physical and mental health issues. Fat levels in the body play a huge role in balancing emotions. The brain needs 25% of the cholesterol that comes in from foods for itself. To think properly the brain needs good fats. Research on cholesterol before has been read improperly says Dr. Leaf .
Valuable Cooking Tips
To think properly we need good fat. Beware: Research has shown olive oil heated high is damaged. When using a higher heat, always use coconut oil or avocado oil.
You can roast your vegetables and then put olive oil on them or cook them at a very low heat. You can also steam the vegetables and then sauté them quickly in a little coconut oil, or roast on high and toss in olive oil. Use raw virgin unfiltered olive oil. Use unfiltered virgin coconut oil.

Dr. Leaf mentioned a top researchers in this field who now is over 100 years old. He has been writing extensively on this – – the truth of about cholesterol. A real enemy is not cholesterol, a real enemy is artificial trans fats.
