Two Salad Dressings to Prevent a
Dark Green Leafy salads are something to include with every dinner. However, if loaded with store bought salad dressing, they can be our downfall. These two below are easy (especially the second) and delicious.
Paleo Balsamic & Strawberry Vinaigrette
(Makes 1- 1/2 C)
- 1/4 C Fresh hulled & chopped strawberries
- 1 TBL Agave nectar, honey, or unsweetened strawberry jam
- 1/4 tsp Sea salt
- 1/8 tsp Freshly ground pepper
- 2 TBL Balsamic vinegar
- 3/4 C Extra virgin olive oil
Place all but olive oil in blender and blend on low until very smooth. With blender running, slowly pour the olive oil through the top in a steady stream to emulsify the dressing. Taste and adjust flavors.
So delicious on salad greens alone or with dried cranberries, pecans, apples. This was in the Ninja Blender book. BTW – the Ninja Blender is excellent!
Honey Mustard Salad Dressing
- 3 TBL Apple Cider Vinegar
- 2 TBL Olive Oil
- 2 TBL Honey
- 2 tsp Sea Salt
- 1/8 tsp Black Pepper
How to Make
Mix all together and shake vigorously. Refrigerate after using. (I like to at least double this when I make it as we use it so often.)
