Super Delicious Soups
Cold days do love soup. Each January John and I participate in a church-wide fast for 21 days. We choose a Daniel Fast, which consists of vegetables, fruits, and nuts. The past three years, we have so enjoyed using Paleo Soups for this fast. Soups are delicious. We didn’t miss the meat or paleo desserts a bit having these soups.
In earlier posts, I mentioned our favorite: https://www.fabulouslyfit.com/chicken-pot-pie-soup :Chicken Pot Soup. This one is still our favorite, but because of the chicken in it, we didn’t use it this year during the fast. In fact, we haven’t been making this one as much simply because it is very time-consuming..
I really like EASY and QUICK. Last year I found a simple recipe and found out the same basic ingredients worked for many soups. These are the kind of recipes I like. The basic recipe credit goes to Elana of Elanaspantry.com. I made my basic recipe even more simple than hers.
Basic Creamy Soup Paleo Recipe
1/2 to 1 Onion chopped and sauteed 10 minutes
1 tsp. Salt
1 tsp. Pepper
1 tsp. Garlic powder or granules
1 can Coconut Cream
1 can or MORE Bone Broth (I’ve only used Chicken Bone Broth, but Beef would also be good.)
Your vegetable of choice. Examples we have made include:
- Cauliflower – add one large head of steamed Cauliflower
- Brocolli – add several fresh broccoli stalks steamed
- Mushroom – add 1 or 2 pounds of fresh sauteed mushrooms
- Butternut Squash – add one peeled, cubed, sauteed Butternut Squash along with about 1/2 tsp Nutmeg with spices. NOTE: Butternut Squash is hard to peel. We have found it already freshly peeled and cut up at Costco. This saves so much time.
- Avocado Soup
- Asparagus – steamed with Nutmeg added
- Japanese Sweet Potatoe
Old favorites continue to be the Paleo Tomato Basil Soup and Chicken Pot Soup.
